Current Position: Associate Professor Dr. Castor is currently an Associate Professor in the Department of Nutritional Sciences(DNS) at Howard University in the Department of Nutritional Sciences, following an 18-year career as a registered dietitian nutritionist. Dr. Castor completed her doctorate and Master’s degree in the Department of Nutritional Sciences at Howard University. Her doctoral dissertation- A Mixed Methods Approach to Investigate the Role of Health Literacy and Various Behavioral Factors in the Prevention of Pre-diabetes and Management of Diabetes Among Black Women. Dr. Castor also completed a doctorate in Health Education and behavior studies at Teachers College, Columbia University. Dr. Castor is the initiator of the Interprofessional Education and Practice (EIP) Health Disparities conference for the College of Nursing and Allied Health(CNAHS) and she has initiated the Global Health and Nutrition and Health Education for the DNS. Dr. Castor has co-authored several scientific publications covering HIV/AIDS and STIs, and diabetes, heart disease, and obesity prevention. Dr. Castor is currently working on addressing sleep and diabetes in the Alzheimer's population. Dr. Castor became a fellow for the Academy of Nutrition and Dietetics (FAND). |
